Ready for another weekday dinner roundup?
This week’s recipes are inspired by the fact that I have a busy work week and cannot guarantee what time I’ll actually make it home. So each dinner can be made entirely in advance and cooked within 20 minutes! That way, if Chris makes it home before me, all he has to do is put the pre-made meal in the oven and whip up a clean side or starch.
Each meal has balanced protein and vegetables and combine easily with simple side dishes that you can customize to what your family likes!!
Bonus: there will be plenty of leftover protein for healthy work lunches throughout the week!
MONDAY – Fish in Paper (PA: slice vegetables; make parchment hearts; or even assemble all the packets) Recipe – Fish with Vegetables in Paper (low carb, gluten-free, keto, primal)
TUESDAY – Pulled Pork Carnitas (PA: make pulled pork in slow cooker – 14 hours; or instant pot- 1 hour)
WEDNESDAY – Lasagna Stuffed Delicata Squash (PA: make filling and par-cook the squash; you can even stuff the squash ahead of time!) Recipe: Lasagna Stuffed Delicata Squash (low carb, gluten-free, keto, primal)
THURSDAY – Sheet Pan Sausage and Peppers (PA: slice vegetables; assemble sheet pan)
